Add separators? They're not visible AFAIK.

There is no 'center icons' setting as such.

There is no actual alignment setting for the docks like you would find in a word processing program.

You can adjust the size of the dock by dragging and edge. This will center the dock contents as a whole. You can also adjust the order of the icons by dragging them on the dock.

Note - make sure the "Lock Icon Dragging" and "Lock Dock Position" items are not selected (right-click a tab > View > Lock...).
