If you just click START and then click on your user icon at the top of the Start menu next to your name, it will open a window that will let you choose a different image. Don't click on Log off, click on the user icon you want to change...

NOw wait, I just reread your initial question... What log off icon are you talking about? I thought you meant the user icon on the start menu. The only way to change any element in your log off dialog is to use Windowblids to skin it and SkinStudio to edit the skins, or elements of the skins (like the log off dialog) you want to alter.

Not the ONLY way, but a good and safe way. Most of the log off and start buttons you find that don't come with a skin package (visual style), are changed with some sort of "hacking" program like Reshack a.o. Using programs like that to alter your system files like the shell32.dll and msgina.dll, can make Windows stop working at first re-boot - even in safe-mode, or after you install an update, another program, change your configuration etc.
