OK, let's break it down. I'll comment on the ones I know.
diablo 2 - not sure if it allows multiplayer without the CD in place... maybe.
mythos - Mythos might be dead, with Flagship going down.
neverwinter nights 1 and 2 - though they allow LAN multiplay, I'm not sure about the CD requirements. It seems to me that the latest NWN 1 patches disabled the CD check, so it might be possible, but I'm not sure.
Freelancer - nope, you need two CDs. Not sure about LAN play either...
Europa Universalis 3 - if you buy the download version from Gamer's Gate, you can install in two computers without the need for CDs. It can make for a long/difficult play, though, unless you agree on speed settings and such. But it's a pretty good game.
Mount and Blade - No multiplayer. Fantastic game, anyway, so it's highly recommended nevertheless.

Sins of a Solar Empire - I think you can install in two different computers... just not sure about simultaneous LAN play.
The Witcher - no multiplayer either, but it's a fantastic RPG, one of the best I've played.
grim fandango - No multiplayer, since it's an adventure game from Lucasarts (and a pretty good one, too).
Dark Reign - wow, this is an old, old RTS (before Starcraft, even... I think it was released in 95 or something). I can't remember if it has LAN play, but I think it required the CD in place to be played... not sure, though.
